Anybody know if i can yank the valve stem seals and replace them while the head is still on the car, with the camshaft on too?

You can, but it is tough.
I found a write up detailing the entire procedure on zcar.com (IIRC).
It requires removing the rad. and moving the cam forward while you use compressed air to hold the valves in place and replace the stem seals. I believe that you also need a special tool to compress the springs while they are on the head in the car.
Search on zcar.com and you should find the article. It is well written and walks you through the entire process, but again, it is not exactly easy or quick.
